The high altitude, dense fog and distinct deviation in day & night temperatures in Kagoshima makes it a prime location for tea cultivating, producing one of the highest quality organic teas in the world.

 

✿✿✿ INFORMATION ✿✿✿

• Matcha powder is insoluble in water. There are some Matcha products which are soluble in water, such products are treated with Dextrine, an additive to make the powder dissolve in water. Being genuinely ORGANIC, we DO NOT add any additives, artificial coloring, preservatives. 100% natural.

 

• We strongly recommend ORGANIC, because you are consuming the whole leaf, so you would not want any chemicals such as synthetic fertilizers or pesticides in your body.

 

• Organic Matcha tends to be a little less vibrant in color, due to the fertilizer used. Chemical fertilizers are more potent as they perform much faster to pump the plants full of nutrients, while ORGANIC fertilizers take months. The flavor and color of Organic Matcha is slightly altered because organic fertilizers do not have the “instant effect” that chemical fertilizers have. So we do not compare the color between Organic and Non-Organic Matcha.

 

 

✿✿ 4 FACTORS TO DETERMINE A GOOD MATCHA ✿✿

• COLOR - The higher the grade, the more vivid green color.

 

• FOAM - A good quality Matcha produces a good foam when whisked, and stays for quite some time after whisking. For our Premium Daily Grade (Ereganto), you should be able to get a good sturdy foam.

Note: It is important to know how to whisk (whisk in "M" or "W" pattern quickly 15-20s or until frothy).

 

• SMELL - A high grade Matcha should have a grassy, vegetal or floral aroma. A low grade Matcha, like culinary grade will have a 'metallic' smell, which is characteristic of late harvest tea leaves.

 

• TASTE - Once you get a nice foam, start taking a full sip, roll the tea and feel the aroma inside your mouth, swallow and you should feel the smoothness, vegetal note and rich in flavor.

Note: The taste changes with different temperature of water. Hence, it is important to use 100°C water because heat is lost during whisking.
